Gujarati cuisine is widely known for its amazingly delicious snacks, some dry snacks like Khakra, Chakli etc. These can be stored for long. There are some Gujarati food which has to be enjoyed fresh. One such dish is Gujarati Dhokla which is healthy and delicious at the same time.

It can be made with fermented rice and urad dal batter which is steamed and served with a 'tarka'. But there are other methods of preparing the Dhokla too. One can prepare it instantly with Gram Flour ( a type of flour made from chickpeas ). Gram Flour contains no gluten. It is a healthy dish since Gram Flour is rich in Carbohydrates, Protein and Dietary fiber. The steaming makes sure all nutrients remain intact.

Dhokla is very easy to make so make sure to check home chef Payel's recipe :

Ingredients :
2 cup gram flour 
salt to taste
1 TSP sugar
1 TSP lemon juice
1/3rd cup curd
2 TSP ginger paste
1 TBSP turmeric water
1/4th TSP turmeric powder
1 TBSP oil
2 TSP fruit salt

For tempering ( tarka )
2 TBSP oil
1 TSP mustard seeds
1 Sprig curry leaves
1 TSP asafetida ( hing )
2-3 green chillies
1/2 cup coconut water
salt to taste
1 TSP sugar
1 TBSP coriander leaves

METHOD :

1) Take 2 cup gram flour in a mixing bowl.

2) Add salt as per taste

3) Add 1 TSP sugar

4) 1 TSP lemon juice for fermentation

5) and 1/3rd cup curd

6) Then goes in 2 TSP ginger paste

7) and 1 TBSP turmeric water + 1/4th TSP turmeric powder

8) Add water and mix to form a batter

9) Now in a small mixing bowl take 1 TBSP oil & 2 TSP fruit salt and mix with batter. Put the batter in a mould and place the mould in a microwave for 6 mins in micro mode.

Now for the tempering ( tarka )

In a frying pan put oil and once oil is hot put in mustard seed , curry leaves and asafetida ( hing )then add 2-3 green chillies and 1/2 cup coconut water. In the solution add salt as per taste and sugar and coriander leaves. 

Put the tarka ( tempering ) on the hot dhokla which is ready in the mould. Once the dhokla is cooled and adjusts to room temperature cut into pieces and it is ready to serve.

Serve dhokla with green chutney or scraped coconut.
